Pineapple garlic salmon, grilled sprouts and butter herb rice


 
Marinade for the salmon:

3 Tbs frozen pineapple juice concentrate
1 Tbs water
1 Tbs cooking oil
1 Tbs granulated garlic
ground black pepper to taste
salt to taste
1/2 tsp cayenne powder - or substitute chili powder to your liking

Steps:
this was a 3# Costco skinless whole side of salmon
cut salmon into loin steaks, creating pieces of equal thickness (the belly and tail will be similar sized pieces, and the upper body will be similar thickness)
salt the salmon pieces on one side only
season the same sides with the granulated garlic, black pepper and chili powder
place each piece in a large work bowl
mix your wet ingredients in a bowl and then pour over the salmon pieces in the work bowl
gently restack the salmon pieces so each piece has marinade on it
let stand/marinate at room temp for 30 minutes
preheat coals/or grill till hot
lightly oil the larger loin pieces as you place them onto the grate, oiled side down
sear for 1-2 minutes per side.
once seared on both sides, move to indirect zone to rest and temp up
cook the skinnier loins last as they'll cook the fastest
once all loins are seared, leave on indirect side for 5 minutes or until desired doneness
we prefer a medium rare to rare salmon so we remove all this form the grill inside the 5 minute mark
if you prefer a fully cooked salmon, leave an additional 3-5 minutes for full cook through
remove to a serving plate, tent and let rest 3 minutes before serving

serve with your favorite veggies, rice, pasta or salad
and don't forget a nice glass of wine. all whites go well with this style salmon
