ok it looks like it worked so with the help of jay lopa and a case of beer we smoked all night long with a few naps in between. none the less we had a very interesting night to say the least. the brisket was done on a brinkman.we never used one before - it was a loner so we winged it. we put it on at 11pm friday it was done at 430am that saturday because of the high temp and no way to control the heat i guess. wrapped in foil placed it back on the brinkman for 11 1/2 hours. started slicing about 430pm saturday and man o man how juicy it was. we were worried about it drying up but that never happened. the 5 butts totaled 29 lbs went on at 9 am friday finished at 2pm saturday with 2 hours of resting. we rotated the butts every 2 hours except the biggest piece that had the thermo stuck in it. we wrote done all the numbers, temps, times so i could post it but i lost that piece of paper but anyway the pics are now online so enjoy and don't drool to much. jay is the guy smoking the cigar.
