Today I walked into Ace hardware and noticed a mammoth smoker all put together and calling my name. I owned a Weber smoker years ago but it was just a baby compared to this thing! Tonight I will do a burn with no meat to clean it up and start smoking on Sunday

Hello Scott! A "trial run" is not a bad idea. You can get an idea of where to set the vents to attain whatever temperature you are looking for. Just a suggestion...don't rely on the built-in thermometer...they tend to be unreliable. Get a good thermometer (either digital or metal) that you can really tell the temp at the grill level.
