Pepper Stout Beef

Had to put a bit of a rush o; this one….we were wet until about 1pm today……
Low n slow with hickory for a few hours, then warmer and faster to finish…..beef is sitting just below stall temps.
Everything else is ready to go with the pan…hopefully just another couple hours.
Got some nice 2020 reserve cheese and a bit of that left over horsey sauce…..no sides….

Made it to 165….it is a rush but it will be a good test……I bet it comes out just as good.
Also having a real top shelf Trappist……..it’s very high ABV. but holy is this one of the best…..try not to drink all 3 I have.

It’s an easy cook….this one was tasty…a bit spicy but I thought it was good all around.
Had some bakery fresh buns to help out the cause.

The St. Bernardus ABT12 is amazing.....buy any local copy cat of a quad style Trappist beer around here and it's just made with tons of sugar or sugar related products to achieve the high alcohol content and the end result is a beer that is just to sweet to drink.......on the other hand if you buy these and store them in the cellar for about 4 years.....if the beer is made well.....the result will be all the sugar type products stuck to the bottom of the bottle and some good beer left to drink......it's been my case most of the time anyways.
These run for $5.30 a pop around here for only 330ml ( 11.15 oz )
