I read Chris's recipe about pastrami last year with some mild interest. When it was pushed up to this months feature item on the web site, I knew it was time.
Got in touch with Allied Kenco and ordered some Morton Tender Quick. The rest is history. Followed Chris's recipe to the letter. I can tell you, there is no interpretation lost. This is pastrami just like if not better then you buy in the grocery store. Perfection. I highly suggest that if you enjoy pastrami you give this a try.
