pastrami curing question

if a part of the meat didn't get fully cured in the curing process does that mean that its inedible? Is there a food safety issue? or is it jsut a question of texture and taste?

Thanks for the reply. The two briskets are in the smoker and I was getting a little nervous about serving them for lunch.
