Pastrami and BIG beef ribs

Saturday I did pastrami on the WSM. Soaked a corned beef in water overnight then hit it with cracked coriander, black pepper and garlic powder. Sliced it and made Reuben sandwiches.

Today it was beef plate ribs and ABT’s.
A 6.66 lb. rack from Wild Fork. Just S&P on them. Took off after 7 hrs, they were amazing! While they were resting, I put some ABT’s on in their place.
Made burgers, dogs and brats on the grill as well. Sides were pasta and potato salads and corn on the cob. Everyone is in a food coma as I type!

Thanks Brett. Yeah, I love anything pickled!
Reminds me of NY and many sandwiches ago. We couldn’t get a good garlic sour pickle out here in NorCal so I resorted to making my own.

You have a slicing machine? Your pastrami looks epic.

Reminds me I have a corn beef in the freezer.

Its been too long since I've had a pastrami sandwich.
