Partially cooked pork butt & ribs

I know that Jim Minion will probably have the answer for this one.

Been asked to cater a company picnic--for about 100 people. My thinking is to provide pulled pork sandwiches and ribs.

Also thinking I don't want to do all the cooking at the picnic, so I cn relax with my co-workers.

If I were to partially cook both the butt and ribs, to what extent (percent?, time?) should I cook them prior to the event and how far in advance?

You can cook them in advance depending on how you want to keep them form the cook to serve. A few days in the frig or a couple of weeks in the freezer.
The ribs do about 80%, you can reheat on a grill very fast and they finish off and tenderize. Glaze the last couple of minutes.
Butt if you are pulling, freeze in zip locks, can heat in the pit or boil in the bag.
