Well, new grocery store opened up. And I guess part of trying to draw in the crowds they had .55/lb brisket (packer trim) Being the thrifty college student that I am, I picked one up and decided that i will be having brisket sandwiches for the next week! Its been on now for about 3 hours, and its smelling real good with that pork butt dripping down on to it from above. Now all I can hope for is the rain to stay away for a little longer!!!

I just took up two butts that were started at 3:00 PM yesterday at 7:00 AM. Those racls were falling apart tender with a bark you wouldn't believe.
Fuel was replenished at about 9:00 and I was still holding 250* when they were taken up.
WSM still amazes me after more than a year.

Pulled the brisket at 10:45. Wrapped it and stuck it in the cooler. It was at 188 degrees. Butt sat on for quite a while longer and reached 195 right as it started to rain!!! I took it off and it pulled perfectly. Both had wonderful bark and were oh so good.
