Overnight pork butt in the rain.

First overnight cook with the billows, and rain in the forecast.

Butt went on at 8.30pm, cooked at 220F grate.

Woke up at 5am and checked temps without getting out of bed. Grate temp was right at 220F. Meat was 160F. Decided to wrap it and went back to sleep. Woke up at 8, temp check at 205F. Wrapped it back up and put it in a cooler.

It was nice to be able to sleep and not wonder or worry about the temp.

No pics of the final pulled pork yet. But here's the start and the 5am before wrapping.

Serving note: the cabbage I had was past its prime so I didn't make coleslaw. Instead I chopped mixed greens that were fresh.

It is not a proper substitute...
 
You bet! Setting things up to run independently makes for a much more enjoyable feast! Long rest has become my mantra! Last brisket went on about 20:00 and came off at 13:00 Friday afternoon, rested until dinner about 18:00 relaxed, many cocktails, low stress sides were prepped during rest. Fired everything for an Excellent feast, they are never perfect, as “we” know.
