If you don't want to mess around wiith having to refill the water pan..I'd go the clay saucer route. Clean up is as easy as throwing away the aluminum foil and refoiling for the next smoke.
You can also foil the water pan and leave it empty. Or you can use the pan with water.
You'll have good results no matter what route you choose to go.
