ORANGE WAFFLES

Orange Waffles

3 cups flour
6 tsp. baking powder
1 tsp. salt
2 tsp. sugar
6 eggs
1 cup ORANGE JUICE
1 1/2 cup light cream
1/2 cup butter, melted
2 tsp. orange rind, grated

In large bowl, mix together flour, baking powder, salt and sugar. In small bowl, beat egg yolks until light in color. To beaten yolks, stir in orange juice, cream, butter and orange rind. Add all at once to dry ingredients and stir to mix well. Beat egg whites until stiff peaks form and fold into mixture. Bake in waffle iron. Serve hot with Orange Currant Sauce. Makes 6 waffles

Orange Currant Sauce
1 TB. cornstarch
1/2 cup ORANGE JUICE
1/2 cup Currant Jelly

Mix together cornstarch and orange juice. Add jelly. Cook over medium heat, stirring constantly, until jelly melts and sauce thickens and comes to a boil. Simmer over low heat for one minute. Makes 1 cup

That looks pretty good, I’ve not done the separated eggs in years. One advantage to using the Cuisinart, one less step and bowl to clean.
 
DH made these for breakfast this morning. We did not have current jelly, he used 1/2 apple jelly and 1/2 pineapple preserves. So I can't rate the sauce, (what he did make was good tho.) but the waffles were very good. And of course, so was the bacon. lol
