Onion Marmalade

Tried a version today...a little too sweet.

Onion, olive oil, sugar, s&p and, balsamic vinegar. Anybody like to share one?

It was a coincidence that today I make Onion Marmalade for the very first time and my wife brings home a menu from a luncheon and what do I see but Onion Marmalade with the beef tender! This was good stuff on a pizza. I bet a good hot pepper would work with it. Perhaps, some Rosemary would be good.
 
Onions have plenty of sugar so I don't use any usually; occasionally a pinch. Other than that I make mine with the same ingredients, sometimes subbing white balsamic, cognac, sherry or fig vinegar for the red balsamic, and sometimes adding a little thyme and/or one or two whole cloves or a piece of bay leaf, depending on what I'm making it for.

Onion 'marmalade' is typically rather sweet but onion 'confit' is not, though similarly made. I lean toward the latter.
 
Kevin thanks. The recipe I saw called for 4 onions and 3/4 cup sugar! I instinctively said cut that in half. Your pinch of sugar may well be right on with the onions I use most frequently...perhaps the author of my recipe had some sour onions!

Cognac....been thinking about that unused bottle in the cabinet.
