Not *QUITE* the forecasted weather!

The weather forecast for today was:
Sunny, 46°.

Actual:
Cloudy, 33°.

I have 3 shirts, a cap, gloves and a coat on to start the fire. Windbreak in place.
 
The sun has finally come out, but the wind continues to blow hard enough that the storm door will hit you in the face if you let go too soon!

The ribs went on at noon, all bottom vents currently closed, WSM @ ~250°

BTW, we had a really windy rain Friday. My WSM was covered, and I had my windbreak folded up, leaning at about a 20° angle into the wind, upwind of the WSM.
The wind blew the windbreak over onto the WSM, and knocked it over!

The only damage was that both tabs on one of the bottom vents were bent down flush with the body of the bottom section. Not too difficult to fix, but I hate battle-scars, especially on my beloved WSM!

3:30 now, have spritzed and turned.
Having trouble keeping temp above 230°.
Added 1/2 a lit chimney.
Ribs are looking tasty, but not showing any signs of being done yet.

I must have a rib jinx. They were edible, but tough...well, maybe better than that indicates.
There is only about 1/3 of a rack left from 3 racks.
Ribs are so expensive, I don't get a chance to cook them too often. These Danish ribs were a little lean, not a lot of meat.
The meat never pulled up that elusive 3/4" that I have searched for, but never achieved.
I cut them to make sure they were done.
Could use some help with the post-mortem, which is in this thread.

BTW, the sides were a big hit.
We had corn-on-the-cob, with honey-butter,
Baked Sweet Potatoes,
Yeast Rolls, and
Tomatoes Vinaigrette.
