Ok, so my first ribs weren't perfect, the flavour was there, just a little to much bite. I'll put what I did and then in brackets how what I think I need to do. If anyone disagrees or has any advice, please share. I'm a big boy haha, I can take constructive criticism :0)
They are pork loin ribs and cooking on 22" kettle
I am using the lid temp as a guide and due having the vent away from the start of the snake it was right over the lit coals It was showing 250 but I don't think the grate temp around the meat was hot enough. (Going to put a meat thermometer in where the ribs will sit for now.)
I went strictly by time of 2-1-1. After 2 hours the meat was still quite light.
(Wait until a good bark has set in to the colour desired)
When they were foiled, I don't think they got hot enough in the inside of the foil? Should I have seen steam coming from the juices? At this point I had also put in a water pan as the thermometer was reading near 300. But again it was directly over the lit coals. With the water pan it dropped to 230ish
(Not going to put a water pan in, check after 1 hour as it will be hotter and leave for longer if not steaming)
Unfoiled and got back on the grill. Temp was at 240ish(above the lit coals) cooked for an hour the. Sauced and left for another 30 mins. Took them off and put in foil tray and covered until needed.
(Toothpick and bend test should have been done here!)
