NEWBIE/buffalo question

Just wanted to drop in and say "Hi". I took the plunge and ordered my WSM from Amazon today. This website appeals to my detail oriented side, but still maintains its fun attitude at the same time.

BTW, anybody here ever cook buffalo on the WSM? I'm a big fan of buffalo meat, and I'm thinking the "low and slow" method of the WSM would be perfect for that meat.

Looking forward to joining in more and more as I get smokin'.
 
I'm a big fan of Buffalo meat myself, but have never tried it on the WSM. Since it is such a lean piece of meat I'd be concerned that it would dry out without introducing an outside source of fat. Most people eat Buffalo because of its' low fat content. If you don't have a problem placing some strips of bacon on top of the meat while cooking then it might be possible to smoke with decent results.
 
The bacon might also add an interesting taste. I'll keep that in mind. Thanks for the tip!

As Russ said Buffalo is very lean and to cook on a WSM braising techniques maybe better for a tender product.
Will be interested in how it works out.
