picked up 2 different Meat thermometers off the shelf at lowes?? is it safe to keep them in the meat "pinched" in between the lid and mid section... the probes are all metal but the wires coming out of probes are "plasticy" covered... will they melt/break/get pinched off??? I have made no mods yet?

Hey Kurt - my first meat thermometer had the plastic covering and it had no problems. I think as long as you leave enough slack to accomodate it and you don't force the lid or "slam" it - it will be fine. I've used it in the oven, WSM and gas grill with no issues. I have a new dual probe with the metal cables and I do the same thing - a little slack to allow the lid to close and not tug and it seems to be working fine.

I had a similar one which had a silicone covering. It held up alright with the heat and running it under the lid.
On HH I put a small piece of foil under to shield it.
