I did a herb crusted standing prime rib roast on the WSM (with waterpan empty and around 325-350) for Xmas and it was excellent. I went to Costco and picked up a 6.6lb Ribeye Roast for a New Years dinner. Is this basically the same roast as the standing prime rib? Are there any differences in cooking the two on the WSM in regards to temp to remove meat, prep, ect.
