Going to do the prime rib with the Montreal seasoning on New Years Eve, this year doing it in the WSM. We also have lobster tails for dinner. My question has anyone ever done lobster tails in the WSM? Thanks!
 
Just grill them with a herb butter. Better to use the kettle or high heat for a very short time. Lobster imho is too delicate for smoking.
 
I agree with Jeff. Be sure not to overcook even on the grill. It's easy to do. What a waste of prime lobster meat.
 
Thanks guys. Last year I boiled them, then finished them up on my weber gas grill, they were great. I just figured this year, with the WSM, I might try something different. I do not want to ruin them however. I think I'll stick to the plan from last year. I know the prime rib will come out OK on the WSM.
