Hello All - new to the forum and smoking in general. Been wanting to get into it for several years but never bit the bullet (pun intended) until my wife and kids picked me up a 14.5 WSM for my birthday. Looking to fire it up this weekend and am looking for recommendations for a first cook? I'm thinking hot and fast chicken would be good to start with due to shorter length of cook and less need to maintain certain temps for long periods of time. let me know your thoughts? hot and fast for a first cook or try low and slow on a smaller pork but. honestly probably wont matterthe order as I'll likely do both this week! TIA. learned a lot already from browsingthe forums.
