New to Weber

Hello all! I'm super stoked to be a part of this amazing group!

I will start off by saying that I am fairly new to Weber products. I use to do all my grilling on a Weber kettle until we started having children. We are now up to 7 kids ranging in age from 2 months to 13 years old.

I've been doing all my grilling on a large chargriller charcoal grill.

I decided to pull the trigger on a 18.5 WSM so on the weekends I can have the WSM smoking away trying to keep up on all the proteins the kids consume!

Located in mid western Nebraska so I'm definitely going to be fighting the wind every weekend.

I'm not new to charcoal but I am new to charcoal smoking and a WSM so if you have any must know information for me right off the get go, it would be greatly appreciated.

Well let me be the first to say, with that many people to feed you better start looking to upgrade to a 22.5 wsm, and double down with a 26 kettle. If that won't cut it, look into the Ranch. Thank me later.

Thanks for the info! I'm sure by next summer I will own the 26 or the ranch! This summer I'm probably going to stick with the WSM and put more effort into my "grill area" which will be a 6ftx12ft car port.

The most important piece of knowledge I can share is very simple,
Learn the basic operation of the WSM, it’s a well designed piece of equipment, make a wind screen of some sort and you should be fine. Automatic Temperature Controls are something I have never felt necessary. I’m a believer in the KISS method, Keep It Simple Stupid my technique is a little different than many but, you will find methods which will work for you. Don’t rush! GOOD barbecue will not be rushed! Patience is a virtue which is important to grilling and smoking. You will be fine, take your time, keep it clean, scrub the grates, and enjoy the ride!

If you have space, I suggest a little larger than 6x12.

Factor in helpers you will hopefully have and room for another grill and/or kettle and/or smoker. Prep space too.

It's OK to start small, but I would include plans to extend it.

Every time I “finish” an area, I wish I’d made it “just a little bigger” Dan speaks the truth!
