Did Christmas with the in-laws last night and they bought me a new Stok insert. My previous grill was a stok and I really liked the insert system they created. The CI grill fits perfectly into the performer, which I was pleased about since I have almost all the inserts they offer. The one I got last night is the "Smoker/Infuser insert". Here's a stock photo:
I like the idea of using it as an infuser more than a smoker (Don't see the need to use it as a smoker, I just put wood chucks right on the charcoal). Today I tried it out with a spiral cut ham.
I put a mixture of water, apple cider vinegar and honey (sort of just made it up as I went
). Here's a picture of the vapors coming out of it.
Then the grill grate goes on top:
Then the meat (obviously):
Here's the ham after I brought it up to 110 degrees IT and just before I glazed it:
The next thing I want to try is to steam vegetables with it. Anyways, after I got it I google searched it to see how other people were using it and didn't find any threads so I figured I'd share here.
