Tim,keep experimenting and searching older posts.I think the baskets work well with lump,due to the many small pieces that fall through the charcoal grate.That is most likely the cause of a quickly extinguishing bed of coals,or buy another charcoal grate and stack at 90* to original. There are so many options to explore,ie. fire bricks, Mr. Lampes original design for smoking in a kettle,foiling the indirect side,a clever char. basket that basically replaces the baskets. So many options.Enjoy your new performer,and remember keep experimenting

Congrats on the beer can chicken, you are well on your way. May I suggest using an internal temp probe that you can stick in the thigh while cooking. I usually use internal probes when smoking on my WSM but in cases like BCC, I use the probe just to make sure it comes out perfect since every chicken is different.

Yep, that is a lesson I learned this time around. I will certainly just leave my probe in the chicken next time, so I know the exact moment it's done.
