I have great experiences with the cheap crap. I go through a lot of them because, 1) I leave them in the rain a lot. 2)I drop them into my sous-vide machine. 3) I sit down with them in my back pocket. I buy the digital probe stuff at Walmart and then, keep it honest. Check it in a pot of boiling water. It should be between 209 and 214 degrees, depending on your altitude and the purity of your water. If that checks out, do the ice/water mix. It's always at 32 degrees. If you are even close, you have a good thermometer and they only cost 7-10 bucks!
