New guy here. I've been smoking food since the 70's, when I used an old refrigerator with a hibachi in it. Now I have mostly newer Weber gear, including the big WSM. No mods, but built a cart for it using an old 'Silver' performance grill structure, so I can roll it around a bit. I use gas, charcoal and electric smokers, depending on the weather and the situation. Three slabs of St. Louis ribs smoking right now.
I decided to join because I collect recipes, particularly around smoking, grilling, and anything chile peppers. I grow peppers, dehydrate them, make powder out of them, then make various rubs from combinations of peppers, a la Gary Wiviott's Low and Slow books. I do like a little spice, so some of my rubs are pretty wicked. I will probably post some if anyone likes a little heat.
