Received my WSM last week and smoked ribs in the rain. Was going to do a butt but it was my boys birthday and he over ruled the butt. Got an idea maybe somebody has tried before. I cured a fresh ham (in pickle) and plan on smoking it tomorrow. Plan on using apple wood and a little hickory for my smoke. I'm thinking about throwing about 4 apple halves on the fire during the last hour or two (removing the seeds of course). Has anyone ever tried this?? I do this with my ribs but I use a large onion or two and a bulb of garlic. It really gives the ribs a unique flavor that is not at all over powering but very tasty.

Got the ham on about one half hour ago. Smoke is flying and smells really good. Put pineapples and cloves on top. Keeping temp down around 200 for a nice slow smoke. Going to try the apple trick after while.
