Hey all, I've been absent from this place for a good many years but have not forgotten it. Chris has done an incredible job over the years since I was last around. I thought I may have been erased from the system but much to my surprise, I'm still in the database. A password reset and here I am. I think I joined back in Y2K because that's the year I bought my original WSM. It now belongs to my son in Scottsdale AZ since about 10 years ago and it still works perfectly. I've been away from frequent bbq'n just using my BGE. The BGE does a good job, just not as good IMO as the WSM. I finally realized that nothing beats the WSM 18" for smoking Q and I pulled the trigger on a new one today so I can get back to cooking like I used to. Oh how things (prices, lol) have changed. I paid $189 in Y2K for the WSM I gave to my son and the one I bought today was $419 lol. Anyway, It's good to be back and I'm looking forward to smoking again on a WSM.

Thanks for the welcomes! Going to stuff and smoke some Polish sausage on the WSM while I'm making my dry cure sopprosatta. All the grinding and stuffing apparatus will be out so I figured instead of buying Kielbasa for Christmas, I'll make my own.
