Need to get my 22.5 to 300-350


 
Well, your clay disk is acting like a heat sink, so it's most likely keeping your temps down. Remove the clay disk and just foil the water pan (empty).

How much/what kind of charcoal are you using?
How much meat do you have on?
What's the weather look like outside?

All these can play a factor in temperature control.
 
I just have a foiled water pan and get 350 without much trouble, just need all the bottom vents open to start and light 40+ briquettes of charcoal.
 
I've never had problems getting my wsm to 300 with a clay saucer. I leave all the vents open and I have the wsm positioned facing the wind where it will blow into one or two of the vents. Try cracking the door a little. If that doesn't working take the saucer out.
 
Darrin, I use a clay saucer and have no issues with HH cooks. Of course a couple extra vents don't hurt. Increased air flow = increased heat
Works every time.

Heck, 300. I did that yesterday with two racks full of meat and water in the tray. Add more fuel and prop the door open a bit and try that.
