Should I cook this like brisket or a big steak?

High heat and then foil?

Direct heat till medium rare or so......?

Or low n slow 250-275?

I have done several chuck roast that were great but this looks like a totally different cut of meat!?!?!?

Any and all advice will be greatly appreciated!
 
Just looks like a nice size chuck roast IMo cook it like one and IMO you will be fine .Around here in the last 10 yrs or so its getting harder and harder to find nice BIG chuck roasts setting in the counters they cuttem so dang small its stupid ! So a lotta young folks might not know what a biggun looks like . Not saying this is the case here but !
 
Cook it like you did the others ... if that's how you want this one to turn out.

My local Tom Thumb surprised me having nice 5~6lb Chuck Roasts last weekend. Double surprise was they were $1.99/lb!
