I have only done four cooks and they were 2 Basic chicken cooks and 2 baby back rib cooks. I have learned a lot - compared to what I knew.
This coming weekend I was planning to cook two pork butts and make North Carolina BBQ per the instructions I got off of the MonkeySee website. A competition BBQ guy named Mike Hedrick has 12 videos and on it he describes how do to North Carolina style pulled pork.
Before I do this, has anyone any opinions of his recipe etc... I have found in a short time that this site is a deep well of information, so I thought I would ask. Thank you.

Never seen the video. I just rub them and throw them on until they hit 190-195. They are pretty hard to mess up. You can try different rubs. different woods. or a little higher temp to speed up cooking. I think the secret is the breaking down of the fat that flavors the meat. I always pull and serve with some bbq sauce or a vinegar sauce on the side and let folks add what they want. They always turn out better than anything I have had any where else.

as mentioned, purty hard to mess up a butt as mentioned. to much smoke might do it. some folks will inject or brine but i would suggest keeping it simple until you have a few under yer belt so you can compare.
