Will be doing St. Louis spares on Monday. This will be the first time I have tried them in anything other than the offset. Will be cutting the racks in half and using rib racks. Any ideas on times?

My average is 7 to 7.5 hours without foil at a lid temp of 250. I most often foil for 45 min. at 3.5 hours, then remove from foil and finish. This method gives me a completion time of 5 to 5.5 hours and tender, but not too tender spares.
