Need a Egg Bake recipe.

Hey,

I need to make breakfast for about 40 people.
I would like to do an egg bake.
two pans preferably on the WSM.
I prefer bacon over sausage but open to new things.
Most eating are Norwegian so take it easy on the spices for them Norske'.

I love egg casseroles. My favorite is with spinach, Gruyère and just a little good ham (sometimes I just do meat on the side), though you could use pre-cooked bacon. A 9x13 pan serves about 10 though. Hard to pull off 40 servings of anything (except butt!) in a WSM.
