NC BBQ Sauce

Does anyone have a clone recipe for Hurseys BBQ sauce in Burlington, NC? I have about used up the gallon I bought as I was coming back through there this summer. I would like to make my own. Thanks. We love the Piedmont Eastern/Western North Carolina mixed type of sauce on pulled pork.

I've had it but do not remember it. The bbq was very good. Kevin can re-create almost anything if you give him something to go by.

As I understand, Eastern NC sauce is about 70-100% vinegar (the balance is water). Some salt, pepper, sugar and, red pepper flakes or powder.

The Lexington or piedmont adds a little ketchup-more for color than texture as this is just as runny as the vinegar sauce.

The next step is similar to N0.5...it has still more ketchup.

Individual versions will add a spice or three....

Thanks Steve, I guess I will have to start with a base vinegar sauce and tinker till I get to what I want. Something along the lines of "Bone Suckin Sauce" is good too!

David, search this site and google Lexington sauce. After reading a few you'll get a feel for the basic formula then tinker according to your tastes.

David,

Not familiar with the sauce you mentioned, but you might also check out Kevin K's "Kinda Carolina" here

It's good stuff !
