As I am a stay-at-home-Dad, sometimes I have to get my grilling fix whenever I can get it. My son, Marshall, feel asleep at noon, on our way home from the library. Naps usually last about 2.5 hours, so I knew low and slow was out, but I had planned ahead and pulled some chicken thighs out of the freezer the day before. I was able to do some dishes, get the chicken and potatoes ready, fire up the charcoal (took 2 tries,) and cook (and photograph) everything in just about 2 hours.
I rubbed the thighs with some left over rub from my last pork butt.
I washed and halved the potatoes, and added them to the CIS with melted butter.
Once the charcoal was lit, I put the potatoes directly under the coals, and the chicken indirect.
Once everything was in the weber, I made some No. 5 sauce, adding a roasted red pepper that was puree'd in the blender and some dashes of Crystal hot sauce.
I rotated the grate about 3/4 of the way through, and brushed some of the sauce on the chicken a couple minutes before I pulled them. I should've checked things sooner, as the chicken thighs got to 180, and some of the potatoes got a little charred. I need a bigger grill (don't let my wife hear that...)
