The chicken didn't seem rubbery to me, though I am no expert. Seemed like normal consistency. I have been grilling chicken on a gas grill for the last year, the consistency seemed the same.

My first attempt resulted in slightly rubbery breast meat. It was getting late, so I took the birds up at 160 degrees. Either I didn't have enough coals in the pan or the water in the bowl tempered the heat somewhat (just guessing).
We split three birds today, and I will be smoking them this weekend. It will be interesting to see how they do this time.
Agreed about cooking chicken over gas. Seems like propane was made just for chicken.
