I used some old school weber charcoal holders that I got on Amazon.
That plus some other mods... works great!
Got some boneless beef shortribs from Costco, quick rub and on the smoker. Excellent!
Used a plasma cutter for the pot, if you have one it's the way to go!
Went with the clay pot heat sink and seams to work great. Run dry and the temp just seems to stick at where ever you want it.
Put a thermometer just under the lowest rack, smokey mountain I think, Amazon, also great.
After this run, I did some smoked salmon and it turned out fantastic.
