My Game Plan For Rib Cook

So this is the game plan I think I'm going to go with to cook 5 racks of baby backs for my wife's team function. I'm going to roll them and cook them the day before for 2 hours, just until the bark has set and just up to the point for them to be foiled. The next day I'll foil them and continue the normal cooking process, about an hour wrapped then sauce them and put them back on for about 30 mins to set the sauce. What do you guys think?
 
I find baby backs to be the easiest most consistent thing I cook on the WSM. Get lid temp to between 225 and 250. Throw 2 pieces of apple/cherry and 1 piece hickory in and wait until smoke thins out. Stick your ribs in. Give it about 3 hours before you start testing for doneness. Sauce and finish with a quick exposure to direct heat.

Gives me consistent tender flavourful ribs every time without bothering with foil.

I've never tried cooking them over two days so no idea how that will work out
