I smoked two 5 pound chickens today, thus my 18.5 is no longer new. I had some temp problems, let it get high then brought it back low. Finally ended my 3.75 hour cook where I wanted to be. Not too bad to control, easier than my kettle. I will be smoking 2 butts on Saturday. I will have plenty of leftovers next Sunday. I took some pictures, I think it turned out pretty good. The chickens were juicy, tender, and a little bit smoky. Family was pleased. My first smoke
 
Welcome Ray! And congratulations on successfully completing your first lesson on the way to Pit Masterdom! (1) on chickens, a little bit of smoke goes a long way, and (2) temperature control takes a little getting used to, but it gets easier every time. Advice from somebody who has been there - catch your temps on the way up, avoid chasing temps up and down to get the temperatures exactly "perfect" (close is good), and kick back and enjoy the experience!

Ray, Welcome to the smokey world. My 1st bit of advice, GET THAT SMOKER DIRTY!!!!!!! Just kidding. Those birds look good enough to eat. There is so much useful info in these pages I hope you get a chance to cook in between readin'. You gotr a good start.

Smoker is getting dirty, smoke #2 is in progress. Started 2 Boston Butts at 10 am. Will use later this week for Pork Carnitas. I am taking the butts to my parents for my sister's birthday. pictures to follow.
 
My second smoke went very well. I smoked 2 Boston Butts that weighed 13.2 pounds combined. They took 10 hours at 225 degrees. Here are some pictures. http://www.facebook.com/album....7171508&l=cbeb26b857
I didn't have the bark I thought I should, but they are tasty anyway. I am using them Saturday for Pork Carnitas from a recipe found on here. I think I have a smoking habit starting (:
