I was elated to get a WSM as a gift from my wife. I was going to get a Bradley Smoker one day with digital controls but she recognized how my satisfaction and joy I get working with real wood and learning fundamental techniques. The bradley smoker is great but it is dependant on proprietary wood pucks a computer and ELECTRICITY.
Within minutes of thanking her, I had that box open and the weber put together. I wasn't even reading the instructions so a couple of things went on upside down and I had to reverse and open the booklet.
I went out and replenished my wood bricket supply and picked up some applewood chips. I still need a source for some great wood chunks. Next stop, my local butcher. I was only going to get one rack of ribs, but I figured if I was going to fire this baby up, I should get 2 racks of baby backs.
I used a basic bbq rub and went to town. 4-5 hours later, I had set up 2 delicious plates of ribs, local corn and mashed potatoes. The leftovers went into rib sandwiches the next day and beyond.
