my first smoke on my new WSM!

Well, thought I'd post some photos for you all to see my new smoker in action. I did some Lime Smoked chicken wings. Wings soaked in keylime juice, tarragon and rosemary overnight..then cooked at 200F for 90 minutes.

I used the IQ110 on it, I bought and it performed flawlessly..and kept the smoker at 200F the entire time.

I cheated and used royal oak briquettes in the chimney, as a starter...then poured those into the center of the lump in the WSM.

Dan, that's not cheating. I use what ever is in my metal can, old used coals, for the chimney, works every time.

Nice lookin' wings. I'm hungry.

I've never heard of the IQ110 before. How does this work? It appears to be attached to the side of the WSM. Did you have to drill a hole in the WSM to use it? Please explain. Thanks.

That thing is a blower and it is covering the intake vents on the WSM. The other intake vents are covered by tape, usually. A sensor in the pit tells the computer when to turn the blower on and off based on what temp you want to cook at.
Conducive to sleep on overnight cooks.

Sounds like the IQ110 may be just the thing for long cooks. I just got my WSM for Father's Day and hope to do my first smoke this coming weekend. (Ribs, of course). I'm hoping to control the heat to about 225 using the Minion Method. We'll see how that goes.

Now you done it Dan! I want to get a WSM after seeing thoes wings. Is that a blower hose that comes with the smoker or is it an option, or something you made?

The can is a very cool technique I have not yet tried, but it makes complete sense. The can acts as a spacer if you will and has no top or bottom. You place it in the center of the ring and fill around it with charcoal and wood. You pour the lit into the can and then pull it out with tongs or pliers or what have you. This technique reportedly allows for a more consistent and I would think symmetric burn (though I suspect the blower would interfere with the symmetry). I just haven't found the right can yet.

And by the way, I did wings last night on my WSM and they didn't look nearly as good as yours. Did you use the pan? With or without water?
