Chuck, yup i used some large plastic wrap to roll the saucage real tight. When it is roll, you pinch botch end of the plastic wrap and keep rolling it on ti self, it will really tighten both end !
I know some folks let it sit in the freezer but i did not, i put it right away in the bacon weave and rolled it again in another layer of plastic wrap. Now it is in the freezer, i will probably cook it saturday or sunday !
