my first experience with high heat ribs

time got away from me last sunday and I had a couple racks of st. louis style ribs hit the smoker at 5:30pm with a target of a later dinner @9pm. I got the smoker temp up to 375, foiled at 7pm with a little apple juice, added a couple of split chickens, at 8:15 removed foil, dropped temp to 300, painted sauce on ribs at 8:45, pulled at 9:00.

The ribs were very, very good. nice dark color, the fat had completely rendered, only complaint was they weren't quite as tender as usual. worth a try.
