So my younger brother flew in last night from a year long assignment in Mexico. My wife and I are throwing him a welcome home party and what says America more tha BBQ? He's not big on pork, so barbecue beef it is. Kroger had a two for one sale so I picked up 9.5# of chuck@ $2.50/#.

I am working with Chris A's Shredded barbecued Beef recipe with a few tweaks. I changed the rub which I will post later. I also have added onion to the mix.

I sliced a yellow onion and placed a slice below each piece of beef. I also plan on topping each piece with a fresh onion slice just before I foil the pans. My thought is that the onions will add some moisture and flavor to the party.

Time will tell.
 
They turned out great! I rubbed them with:


2 T fresh ground black pepper
1 T garlic powder
1 T oregano
1 tsp marjoram
1 tsp celery seed
1 tsp ground coriander
1/2 tsp nutmeg
1/2 tsp cayenne

For an over night stay in the fridge. The next day I rubbed them with 3T of Kosher salt. As of tonight there is nothing left! My older brother came up with a new sauce just for this recipe and it was fantastic!
