My wife has shutter fly so I will give that a shot. I placed a rub on the Prime Rib then vacuum sealed it over night in a mixture of Heinz 57 and A-1. I then smoked it for about 2.5 hours at 225 degrees with an internal temp of 140. It came out with a nice crust and melted off the plate like butter. It was beautiful. The Lobster Tails were about 1.5 pounds each. I split each of them down the center and basted with a mixture of lemon juice, lemon pepper and garlic. Smoked next to Prime for 1/2 hour. When I pulled the Prime, I placed the Tails on the lower rack and smoked for another 15 minutes. It was the best Lobster Tail I ever had. I used a mixture of Hickory and Mesquite chips that I soaked in water over night.
