mustard butt and butterfly chickens as we speak

Thanks guys for the messages.Went to Bbqs galore
in Dublin today and bought acu- rite probe therm
apple and pecan wood chunks,and an instant read
therm.Nice store but focus on grilling.wish there
was a Smokers Galore.Anyway I am currently doing
a mustard butt and two chickens using the minion
method with apple wood chunks.I got the butt on bottom and birds on top grate. got my probe through a cork on bottom grate and my Genesis therm
through top vent.Probe steady between 248 and
255 back and forth.Top therm Reads a little lower
at about 245.I am happy so far with they way
things are going,but sugar can turn to **** real
quick and I better get out there and check things
out.LOTS OF LOVE TO YOU ALL.
 
So how did it all turn out? I wonder if the chicken on the top will flavor the butt below.

How did you time the whole thing? Didn't the chicken require much less time then the butts?

I wouldn't advise cooking poultry above anything else at the temps described-- just better to err on the side of caution.

Also, I don't believe sugar is converted to the substance described in any case, and would prefer not to see certain descriptors used when we're talking about food.
