I have just been told I have to smoke two turkeys for Thanksgiving this year. I typically smoke one and fry one. I will be using my WSM 22.5 for the job. My question is should I put each turkey in an aluminum pan or straight on the grates. I have a couple of the Camp Chef Turkey Canons so either way in no problem. Just wondering what others may have tried. Thanks in advance for any suggestions.
 
The problem with roasting pans in general is you don't get good air circulation inside the pan, which inhibits browning. I always cook right on the grate itself. If you are worried about the top turkey dripping and messing up how the bottom turkey looks, you can buy 12" round disposable baking sheets that are just 1/2" deep, to catch the drippings.

Thanks Chris. I was concerned about air circulation as well as the top bird dripping on the bottom one. I will take a look into the round pans.
