Did my first ever pork shoulder on the WSM--that's also my first smoke with water in the water pan. It made some delicious pulled pork! Anyway, my question is--what is the best way to dispose of the water/fat mix in the pan?

Better answer..the same place you dispose of the fat if you cook something in the oven. I let it set up and wrap it in foil and put it in the garbage. I don't use water in the pan. I foil a clay saucer. My old Brinkmann electric water smoker convinced me a water pan with water in it is not a good choice for my way of doing things.Could also do the butts in a foil pan and side step the issue.

I did a lot of searching for the same question, and there's not a really good answer. One way would be to cool the pan enough for the fat to harden; you can then scoop it out and throw it in the trash. One thing I've done is mixed in a bunch of flour to turn the whole slop into a thick paste that gets thrown in the trash.

From here on out, I think I'm going to skip the water and try just running it with an empty/foiled pan and avoid the mess altogether.
 
Martin, even with the foiled pan you get fat accumulating on top of the foil. Actually, some even leaks through to the pan. I just do what you do. Let it cool till it thickens and fold the foil up and toss in the trash
 
It's difficult to foil with the 22". I went through the hassle to double-wrap the bowl, but from now on I will just put a couple of sheets across the top which will be disposed of each time. It'd be nice if Weber made custom-fit pans like they do for their grills to catch drippings.
 
I use the pan dry as well, but I have heard a couple good ideas for the fat/water mix.

1) dig a hole and dump the water... just make sure its deep enough that animals won't dig it up.

2) dump the ashes into a pail and mix in the fat/water. Apparently it can make a thick paste.

Either way it's messy.

If it's solid or semi solid I scrape it into the trash can. If it's still pretty liquid then I dump it in a corner of my side yard where no grass can grow for lack of sunlight.
 
Thanks for all advice! I wound up scraping most of the solids and dumping the rest (there's a depression that leads to a field behind my house), which was followed by a storm shortly afterward. When I cook, I usually just put stuff like that in the fridge, wait for it to solidify, and easily remove the fat. But the water pan won't fit in my fridge!
