Guy's I need your help on this one!

My Mother and Mother n Law want me to smoke some whole chickens for Sunday.

Question is I can put them on at 9:30 AM till 12:30 PM (won't be home during this time). Never done chicken that long. If I q at 3 birds at 225ish is 4 hrs too long? Will they be way overdone?

I usually do chickens 300+. I will be using the foiled clay method.

Should or could I put them on frozen and use mustard for the rub to stick?

Any and all help is appreciated.
 
A lot depends on what you're cooking. Thighs can goo for 3 hours, but not breasts which take more like an hour. Bottom line, is that 4 hours is long for chicken. Why not do Roadside chicken on the grill? Might make life simpler. (Just search Roadside Chicken on this site.)

I do Roadside 2-3 time a month, just don't have time this Sunday.
 
I think you will be ok. Keep it at 225F and when you get home, set it free and let it rise to whatever you can...open the door, use a hairdryer, whatever, raise the temp ASAP...
