Mothers Day Cook 18.5 WSM

Wanting to get a few opinions here. Asked wife what she wanted for Mothers Day Lunch/Dinner. BBQ! So I am cooking for my wife and DIL:. The menu is as follows: brisket app 14 pounds before trim, one or two butts[depends on how and where I buy them] Two Chickens and finally ribs, ST Louis or baby baby backs.

I am thinking the following:

Starting brisket at app 6:00pm Saturday on upper rack and pork butt or butts on lower rack. That should give me app, 18 hours with a two hour rest for the brisket, lunch/dinner at 2:00pm. Butt or butts should be done by 8:00 am, plenty of time to rest and pull. Ribs 3-2-1 Starting at app 8:00 am lower rack If it gets to crowed I figured I would throw the ribs to the oven for the 2 hour foiled pan then to the grill to finish. Chickens at about 12::00pm. Thinking a bg of KB should get me thru this, I have app 80 pounds. Going to try for Dutchs wicked beans. Kids are in charge of the sides. Wife says she needs Q for the freezer.So we are wanting the left overs.

Definitely sounds like a plan to me. I would have extra charcoal on hand however, because you NEVER want to run out of fuel. Never, ever. And love the idea of Dutch's beans too. Good luck!
 
I've been using a foil wrapped pan and an un foiled clay saucer and just rinse it out after every use. It's starting to look like a pizza stone. I'll need to try it without the clay saucer on my next cook.
 
Wow Bill that's going to be a busy cook. Hope you have time to snap a few pics. With any luck you might get that brisket cooked early and free up the top grill. FYI a Hover grill will fit in the 18.5. They aren't expensive but it could help you out putting the brisket upstairs for the final part of the cook.

Gary, maybe I am being stupid or my brain is failing but what is a hoover grill. I tried googling it and did not get anything.
 

Yes that's the Hovergrill. I bought mine a couple of years back to use on my kettle and it just so happens to be the right diameter to sit on the top grill of the 18.5. It would work really well for what you are doing. Once the brisket shrinks you could put it up top for the final cooking time or whatever. They are light duty but it would hold the brisket no problem.

I thought my wife was a big eater! No dessert?

I should of said my adult children will be here also with there families. Wife also wants leftovers for the freezer.

Mothers Day Dinner will now be Saturday. I start a brisket at about noon today. Tried tp ost a pic but cant seem to figure it out. Threw on two butts about 4:00 pm hoping to pull them off around 7:00am
