That is such a beauty. Thanks for sharing the pictures. I'm drooling at the pictures of the pork butt and brisket!!!

That BBQ sure looks good!

What a documentary of your cooking!! Send it all to National Geographic!! I noticed you used a different rub on your chicken than on your brisket and pork butt.
Great pictures and fantastic pit you have there. Are all the neighbors snooping around now?

Thanks Jeff,....lol...yeah, the neighbors wondered what that great smell was. I brought them a chicken and they loved it.

On the chicken and turkey breast, I rubbed with olive oil then used some Cookshack spicey chicken rub.

Howdy Rocky,
Looking through your photos, you have some shots of the tuning plates.
What are these things? What function do they serve.

Tunning plates equalize the pit temp from the firbox to the other end of the pit within 10 to 25 degrees.
Without the plates you would have some very hot and cold spots on the cooker.

Rocky,

How would you rate the BBQ you made from your Klose compared to your WSM in terms of texture, taste, etc? I would be curious to know.
